After battling it out in a 'cook-off' for a place at the prestigious Michelin star restaurant 'Chapter One' in Kent, Daniel went on to secure a position as a trainee chef by winning his place on the strength of pure talent and determination. It was there he gained a reputation for producing high-end food, working with fashionable ingredients and plating them in the professional style to be expected by a Michelin star trainee. Daniel quickly pushed through the ranks to the position of Junior Sous Chef thanks to sheer grit and a natural flair for food creativity.
Daniel's menus feature an eclectic array of mouth watering 'in-season' produce, with a strong and personal emphasis on 'field to fork'. His stunningly creative dishes are backed by a philosophy to serve high quality food, working with local suppliers from: Ewings fish to Loughanmore Meats and Cassells fruit and vegetables.
